AWAKEN MUFFINS

these were made using the AWAKEN mix which has a blend of seeds and pistachios giving the muffins a wholesome texture.

dry mix 

  • 1 cup of mix, Awaken Smoothie
  • 1/2 cup oats
  • 1 tsp vanilla essence
  • 1 tsp cinnamon powder
  • 1 level tbs baking soda
  • 1 1/2 cups buckwheat flour or self raisin flour, sifted
  • 1 cup of frozen raspberries

wet mix

  • 1 large banana
  • 1 1/2 cups milk
  • 1 tbs extra stevia or sugar or if you require

HOW TO:

Step 1 Preheat oven to 180°C/160°C fan-forced. Line a 12-hole, or 6 - hole 1/3 cup-capacity muffin pan with paper cases.

Step 2 Combine awaken mix, oats, flour, vanilla powder or essence, baking soda and cinnamon, in a large bowl... Using a wooden spoon, stir until just combined (don't over-mix). Fold through the frozen berries and spoon mixture into paper cases.

Step 3 Bake for 25 minutes or until firm to touch and a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes.
