Performance Muffin | optimise your athletic performance pre game, pre race!
INGREDIENTS 

Dry Mix 1 cup of mix, of Performance Smoothie 1/2 cup oats 1 tsp vanilla essence 1 tsp cinnamon powder 1 level tbs baking soda 1 1/2 cups buckwheat or self raising flour, sifted 1 cup of frozen raspberries 1 1/2 cup milk 1 tbs cocoa powder (callebue is my favourite)
Wet mix 1 large banana 1 1/2 cups milk 2 tbs extra stevia or maple syrup

DIRECTIONS
Preheat oven to 180oC/ 160oC fan-forced. Line a 12-hole, or 6-hole 1/2 cup capacity muffin pan with paper cases. Combine awaken mix, oats, flour, vanilla powder or essence, baking soda and cinnamon, in large bowl.. Using a wooden spoon, stir until just combined (avoid over-mix). fold through the frozen berries and spoon mixture into paper cases. Bake for 25min or until firm to touch and a skewer inserted into the centre comes out clean. stand in a pan for 5 minutes. Transfer to a rack to cool down and serve.

Tip: You can replace the banana with grated apple and rasberries for another great flavour.
