- 500g kale and spinach mix
- 2tbs pumpkin seeds, toasted lightly
- 1/4 thinly sliced fennel
- 2tbs dried cranberries
- 1/2 cucumber sliced
- 1tsp honey or no sugar maple syrup
- 1tsp dijon mustard
- 1 lemon/ juice
- salt and pepper
To make the dressing, combine mustard, honey or no sugar maple syrup, lemon juice, salt and pepper.
in a non stock pan, lightly toast pumpkin seeds until brown and fragrant.
In a large salad bowl, add salad mix, fennel and cucumber. Toss the pumpkin seeds and cranberries through.
add the dressing when ready to serve.
