Kale, Seed & Cranberry Salad


  • 500g kale and spinach mix
  • 2tbs pumpkin seeds, toasted lightly
  • 1/4 thinly sliced fennel
  • 2tbs dried cranberries
  • 1/2 cucumber sliced 


  • 1tsp honey or no sugar maple syrup
  • 1tsp dijon mustard
  • 1 lemon/ juice
  • salt and pepper


To make the dressing, combine mustard, honey or no sugar maple syrup, lemon juice, salt and pepper.

in a non stock pan, lightly toast pumpkin seeds until brown and fragrant.

In a large salad bowl, add salad mix, fennel and cucumber. Toss the pumpkin seeds and cranberries through.

add the dressing when ready to serve.

Add a little protein to make into a meal, or serve as a side dish. "To take shortcut, use the Beerenberg honey and soy dressing with lemon juice
