OAT PANCAKES
INGREDIENTS
- 1 large banana
- 2 eggs
- 50ml almond milk or your choice of milk
- 1/3 cup Healthy Empire smoothie mix
- 2 tb oats
- 1/2 teaspoon baking powder optional
- pinch of salt
- no sugar maple syrup to serve (optional) or 1tbs coconut yoghurt to serve
METHOD
- Combine the mix, ripe bananas, egg, milk, baking powder and a pinch of salt in a blender and blend until smooth and thick.
- Cook a spoonful of the batter in a drop of oil in a non-stick frying pan set over medium-high heat until golden brown on both sides and cooked through.
- Serve with maple syrup/honey and fresh fruit.
