Healthy Empire Oat Pancakes



  • 1 large banana
  • 2 eggs
  • 50ml almond milk or your choice of milk
  • 1/3 cup Healthy Empire smoothie mix
  • 2 tb oats
  • 1/2 teaspoon baking powder optional
  • pinch of salt
  • no sugar maple syrup to serve (optional) or 1tbs coconut yoghurt to serve



  • Combine the mix, ripe bananas, egg, milk, baking powder and a pinch of salt in a blender and blend until smooth and thick.
  • Cook a spoonful of the batter in a drop of oil in a non-stick frying pan set over medium-high heat until golden brown on both sides and cooked through.
  • Serve with maple syrup/honey and fresh fruit.
