INGREDIENTS
Dry mix: 1 cup of mix, morning companion 1/2 cup oats 1 heaped tbs cocoa powder 1 level tbs baking soda 1 and 1/2 cups plain flour, sifted dark choc nibs
Wet mix: 2 bananas 1 and 1/2 cups milk 1 tbs extra stevia or sugar or if you require
METHOD FOR WET MIX:
- Add all dry mix in bowl
- Chop up banana and milk and blitz
- Add extra sweetener if required
- Combine with spoon and add to muffin tray
for the muffins:
- Preheat oven to 180°C/160°C fan-forced.
- Line a 12-hole, or 6 - hole 1/3 cup-capacity muffin pan with paper cases.
- Combine mix, oats, flour, cocoa powder, baking soda, dark choc nibs in a large bowl.
- Using a wooden spoon, stir until just combined (don't over-mix).
- Spoon mixture into paper cases.
- Bake for 25 minutes or until firm to touch and a skewer inserted into the centre comes out clean.
- Stand in pan for 5 minutes. Transfer to a wire rack to cool & enjoy
