Healthy Choc Muffins

INGREDIENTS 

Dry mix: 1 cup of mix, morning companion 1/2 cup oats 1 heaped tbs cocoa powder 1 level tbs baking soda 1 and 1/2 cups plain flour, sifted dark choc nibs

Wet mix: 2 bananas 1 and 1/2 cups milk 1 tbs extra stevia or sugar or if you require

 

METHOD FOR WET MIX:

  • Add all dry mix in bowl
  • Chop up banana and milk and blitz
  • Add extra sweetener if required
  • Combine with spoon and add to muffin tray

 

for the muffins:

  • Preheat oven to 180°C/160°C fan-forced.
  • Line a 12-hole, or 6 - hole 1/3 cup-capacity muffin pan with paper cases.
  • Combine mix, oats, flour, cocoa powder, baking soda, dark choc nibs in a large bowl.
  • Using a wooden spoon, stir until just combined (don't over-mix).
  • Spoon mixture into paper cases.
  • Bake for 25 minutes or until firm to touch and a skewer inserted into the centre comes out clean.
  •  Stand in pan for 5 minutes. Transfer to a wire rack to cool & enjoy
